After a night of carving pumpkins, the only way to follow that up is by baking the pumpkin seeds. I remember only one time growing up that my family baked the seeds. I ate a handful and realized why we didn't bake them more often; they were not good. But I figure after all these years, it's worth another shot. This time, I came prepared. I found a recipe that includes sugar, brown sugar, and cinnamon to dress up the seeds. It worked, sorta. The flavor was really good, but the seeds weren't as crunchy as I'd anticipated. They were just soft enough that it ruined them, once again, for me. I guess it just wasn't meant to be.
