Lucas had a great idea to cook up some chicken fajitas in the slow cooker. Usually, I would have just cut up and cooked up the chicken in a skillet with some peppers. This recipe is much better than that though. Set your slow cooker on high, add green, yellow and red peppers on the bottom. Then layer on the chicken breasts, sprinkle on some fajita seasoning and pour in a quarter can of chicken broth. After about 3.5 hours, the chicken and peppers were super tender. Lucas spent a few minutes shredding it all up - and dinner was ready. The only bad thing is the chicken was too juicy. Next time, I might try to strain out the broth for a little cleaner eating experience.
